The start of my Iki-Jime journey from Australia to Japan and back again, many times, thirty-ish years ago. (Pinned Post)

From the archives, a short explainer about the start of my Iki-Jime journey from Australia to Japan and back again, many times, beginning some thirty years ago.
This is a short promo produced for the launch of my great supporter @chefbennett23 Shannon Bennett’s Benny Burger by @richardlkeddie

I would like to make a special mention of @chefneilperry who convinced me to start selling my product to Australian customers as well as Japanese. My first Australian customer, all those decades ago. Thanks, mate.

The Iki-Jime technique is gathering followers in Australia. The fewer Mass-Catch operators there are, the better.
Ask how your fish was caught. Can your seller tell you who caught it and how?
Was it caught by an artisanal fisherman? Was it Iki-jime treated?

Do you know what Iki-Jime treated product looks/tastes like?
If it was caught using a mass-catch technique it’s not ethical or sustainable.

This kind of interaction happens more often than you might imagine. Although this shark is clearly a very, very big one! This is just one instance to remind us of the wonder of the sea. We don’t do nearly enough to protect the ocean environment.
The consumer is mostly unaware of the fishing methods they support with their purchasing power. Mass-caught fishing is an example and it has wider repercussions than the obvious ones. It impacts biodiversity. It has a flow-on effect to other species.
Overfishing also contributes to the effects of Climate Change.

Industrial Squid fishing, do you know how bad things are?

“Squid fishing industry out of control”

As governments meet at the UN to discuss the fate of the world’s oceans, a shocking new report exposes a rapidly growing and largely unregulated squid fishing industry that’s out of control. Electrofishing abomination

The seafood industry is masterful at innovation, especially where they can hone their indiscriminate mass-catching practices.
Not content just to trawl, in Europe, thus far, they’ve developed a more efficient method using electricity.

Pulse fishing. Electrofishing.

These are some of the labels used for it.
This way they can save fuel not having to lug around those pesky heavy chains and otter boards that they usually drag across the seafloor…

Electrocuting everything in its path.
Fish exploding and breaking their own backs from the shock. The shock and pain must be unimaginable.
Turning the seabed into a graveyard.
All species. Young and old. Juveniles that won’t survive to breed.
And you can bet that there’s some kind of greenwashing going on that will sell this method to the consumer as being ‘ethical’ and ‘sustainable’.
Disgusting.
Always ask questions of your fishmonger who caught it and how it was caught.

The changes in seafood dining in Australia over the decades

It’s interesting sometimes how those pesky algorithms work and suggest things to you…

This book has popped up for me as a suggestion. Published by Greg Doyle and co-authors Grant King @smile.catering and Katrina Kanetani, it harks back to the days, several decades ago when I was singularly exporting all of my product to Japan and I had no customers in Australia. Those chefs like Greg Doyle at Pier and Neil Perry at Rockpool @margaretdoublebay who were amongst my earliest Australian customers and were brave to stretch beyond what was the accepted standard for seafood in Australia. These guys broke through that glass ceiling.

We should all thank them immensely for their genuine desire to give their diners the very best experience possible. It changed the landscape of seafood dining in Australia.

? Seaspiracy

Having watched Seaspiracy, and asked to comment, I have to say I agree with the premise, but I believe they have taken an all-or-nothing approach for how to resolve the issues it raises. I understand why. For decades now I’ve been trying to petition industry players, consumers and authorities to adopt and support a more artisanal approach to fishing. What needs to happen is an elimination of mass-catching methods. The use of greenwashing ecolabels such as MSC, ‘Dolphin Friendly’ etc that purport to offer the consumer an ‘ethical’ and ‘sustainable’ purchase is a furphy. These accreditations are purchased and, in my view, don’t deserve their kudos and have been used as cover to perpetrate further decimation of fish stocks. Some of the ‘expert’ opinions expressed in the doco I feel are compromised by their involvement and/or vested interests. Big Fish have used ecolabels, influenced politicians with donations (who have then directed the fisheries authorities to permit unsustainable methods to flourish). The industry and its helpers have spun this ‘sustainability’ story and the misled consumer then believes the fish they are purchasing can be both cheap and sustainable because a label tells them so.

The only way to ‘cheap fish’ is harvesting via mass catch methods, you can see some of these boats and their trails from space.
I’ve been banging this drum for 25 years now. In the last few years on social media so as to reach the consumer and inform them of the disparity between ecolabel ‘sustainability’ and real sustainability. The only answer is to fish with an artisanal technique. Not an industrial scale. Artisanal catching is more humane, the seafood is value-added, there’s zero environmental footprint and the quality of the seafood is far superior. The environment benefits and the resource can recover.
I want to point out an Amazon doco worthy of attention titled “hand.line.cod”. The Fogo Island Cod industry were forced to revert to artisanal fishing, as their fishery had collapsed due to decimation by industrial fishing. They’re on the right road. Some of their techniques need adjusting. I will discuss this more in my next post.

Hello Friends.
2020. What a year. So many challenges for us all. So many of us have suffered in untold ways.
In deference to this difficult year, I’ve exercised restraint in calling out poor practices.

But as the year ends, 2020 has also given us an indication of how resilient Mother Earth can be if we give her an opportunity to mend herself.
I hope that we can learn some lessons from this horror year and change the way we live.
We are less than 12 years away from not being able to undo our mistakes.
The financial success of the greedy mass-catching fish companies and organisations and

those politicians who answer to corporate interests (whose interests are detrimental to our

frail ecology and contribute to climate change) comes with an UNSPEAKABLE pricetag for our planet.

It’s not too late but we need to act. Now. And no one communicates this better than David Attenborough.

Aquaculture, a perspective 1/7

There’s been a bit of interest from people around the topic of aquaculture and what my thoughts are on it recently…mostly since I posted the “Saving Martha” #surf #beach #repost. This wonderful, unique surf beach is at risk. So much is at risk. I have been very clear on my position about aquaculture for many years. We need it to satisfy future dietary protein requirements. But ethically, sustainably and best-practice. Little of which I believe is happening right now – a 7 part series, today is 1 of 7

Saving Martha #repost @patagonia

I urge you to watch this great short doco about the communities affected (both living in these areas and visitors such as surfers who come for the incredible surfing) by the current and proposed fish farms in Tasmania. Patagonia are doing some excellent work in this space. “Saving Martha is a short film about fish farms in Australia. Tasmania is regarded as one of our most pristine and wild states. However, in recent years that reputation has been tarnished by the boom of the local salmon farming industry. With environmental regulations struggling to keep pace with the industry’s growth, the marine environments that host the industry have been significantly impacted and, in some cases, have approached collapse. Increased scrutiny and criticism of the industry has forced operators to find new locations, including neighbouring King Island – adjacent to the world-class waves at Martha Lavinia Beach. Saving Martha highlights the plight of the King Island community, while emphasising the negative impact the proposed farms will have on the ecology of the region.

Patagonia Founder and Executive Producer, Yvon Chouinard, and Director/Producer Josh “Bones” Murphy made Artifishal- an 80 minute feature – the story of fish hatcheries and fish farms from California to Norway. After witnessing the conditions of factory fish farms as well as the genetically inferior, dumbed-down salmon they churn out. The film explores the repercussions of a wrecked net pen and the underwater destruction and disease caused by an open-water fish farm.
Humans have always thought of themselves as superior to nature and it’s got us into a lot of trouble. We think we can control nature; we can’t,” notes Yvon Chouinard, Patagonia founder. “If we value wild salmon, we need to do something now. A life without wild nature and a life without these great, iconic species is an impoverished life. If we lose all wild species, we’re going to lose ourselves.””

“Individually Line-Caught” – *Marketing Deception*

“Individually Line-Caught” – *Marketing Deception*
The connotation usually associated with the term “Individually Line-caught” is that of an individual line-caught fisherman (as you can see here in our footage).
BUT, an ever-increasing plethora of unscrupulous operators in our industry are grossly misrepresenting and mislabelling their products as “Individually Line-caught”, when it isn’t.
Sure, this is an ‘individual line’, BUT it fishes with THOUSANDS, and often TENS of THOUSANDS of hooks over tens of kilometres of distance. It is indiscriminate, incredibly stressful (often fish are dead on the hook for hours) and ultimately strips quality and value from the natural resource that has been caught.
“Individually Line-caught” can disgracefully be twisted to include Mass-Caught guys.
This is not #ethical or #sustainable.
Beware. Ask your fish-monger how many hooks are on that “Individual” line.

Imagine a healthy ocean. It is possible

“Healthy Oceans….The good news is it is possible, but we are standing in our own way”
David Attenborough, what a formidable advocate he is for our planet and oceans.
#Overfishing occurs when fish and other marine species are caught faster than nature can reproduce their supply. If the exploitation for our oceans resources continues at its current rate we can expect to see the total collapse of edible fish stocks by 2048.
Overfishing actually increases the effects of Climate Change

You’ve been told all “Line-caught” is good , right? – No

One of the more regular questions that I am asked is what defines genuine sustainable and ethical line-caught product. The product being caught in this vision is line-caught but nowhere near ethically in my opinion.

These mass-poling (pole and line) operations are regularly utilised by canners of tuna and fall well-short of sustainable and ethically-caught product on many levels, but the three main ones being: · The quality of the product is very poor
· It is incredibly stressful and inhumane
· To qualify as ethical, surely you must be adding value, such that you are maximising the return/quality for the resource.
This technique shown here actually strips value from the resource by ten or even more. So in practical terms, if this same product were to be genuinely Iki-jime line-caught by an artisanal operator it would attract potential pricing at least ten times greater (for premium quality Iki-jime product) than it will via this mass-poling technique going en-masse into a can.
So, beware “Line-caught” can also be mass-caught guys.

#Overfishing occurs when fish and other marine species are caught faster than nature can reproduce their supply #masscaught
If your fish was mass-caught it’s not ethical or sustainable and at this rate of mass-catching, there will be no fish in the sea by 2048, perhaps sooner.

Fish are disappearing, and will be gone by 2048, if we don’t change things

Pick the ethical method

Legend has it that fish were once so abundant in the sea that you could catch them in your hand.
Then mankind started mass-catching …this was already happening by the 1400’s.
Over time mankind has become exceedingly efficient at scooping life from the sea and leaving carnage in its wake.
At this rate, there will be no fish in the sea by 2048, perhaps sooner.
#endoverfishing #endmasscatching #endbycatch #endtrawling #enddredging
Ask how your fish was caught. Can your seller tell you who caught it and how?
Was it caught by an artisanal fisherman?
If it was caught using a mass-catch technique it’s not ethical or sustainable.

Uni (oo-nee)- let’s #eattheproblem

#eattheproblem

Many people do not know that Sea Urchins are a pest which are wiping out marine biodiversity and leave a barren underwater moonscape-like environment in their wake. This makes it difficult for other species to survive once the Sea Urchin move into their habitat.
From an Ethical and Sustainable point of view, it makes perfect sense to harvest Sea Urchins to allow the endemic species to proliferate.
It certainly helps that Uni (oo-nee) which is the Japanese name for the edible part of the Sea Urchin (roe) is delicious to eat.
We are fully supportive of, and endorse, the Sea Urchin divers, particularly here in Tassie.
Every time, as consumers, we spend money, we’re casting a vote. Each instance where we choose Ethical and Sustainable counts.

Line-caught?

I’m often asked about the term ‘Line-caught’.
There’s a lot of confusion about what ‘Line-caught’ means. This is deliberate.
To confuse the consumer into thinking they’re buying ethical and sustainable.
Only one type of line-caught is sustainable and ethical…and that’s Individually Line Caught.

There’s much dishonesty and greenwashing around the term ‘Line-caught’.
Ask questions.
The seller should know who supplied it and precisely how it was caught.

The truth hurts #endoverfishing

If terrestial farming happened like this there would be a massive uproar. But this is permitted (and even encouraged (!) by our governments and fishing authorities) to happen in our seas every day. Millions of marine life killed for nothing.

The truth hurts. This brilliant @WWF advert was dropped because the fishing industry didn’t like it. https://vimeo.com/131066980 @GeorgeMonbiot @IcelandFoods
Sometimes the product of these catch techniques is sold to you as ‘sustainable’ or ‘line-caught’. Ask questions. Time for retail activism.

Stop #overfishing

INSTA Stop Overfishing.JPG

There is no doubt plastic is a big issue.

But it’s not the biggest. Climate change and biodiversity are.

Overfishing contributes to both.

“A study in the journal Marine Policy suggests plastic pollution might be reaching a planetary boundary, a term used to describe safe operational environmental limits within which the world can continue to function safely.

Yet, for all the attention given to ocean plastic, it is not the biggest threat to the marine environment. Both climate change and biodiversity loss (much of which is caused by the impacts of overfishing of our oceans) were shown to have exceeded their respective planetary boundaries when the term was first introduced, in 2009. More recent studies also flag CLIMATE CHANGE and BIODIVERSITY as the two CORE planetary boundaries. Excessively exceeding these for a prolonged period could cause rapid and major changes, such as runaway temperature rises or the collapse of important ecosystem functions.”

#overfishing (which severely impacts biodiversity) must be addressed ASAP before it’s too late

” @we_saveplanetearth While we promote veganism as the most sustainable and ethical lifestyle, we know that many people still eat fish and other animals. But did you know that 90% of fish and seabirds have plastic pieces in their stomach? Feeling like they have a full stomach (full of plastic!), they starve and die a terrible death. We need to seriously change the way we consume plastic!
.
A good rule of thumb are the four R’s: Refuse, Reduce, Repair, and Recycle ♻️ 💚
Refuse single-use plastic such as bottles, shopping bags, straws, cups, cutlery, etc. and get reusable alternatives, such as steel or glass bottles, cotton bags, etc.

At the current rate, all commercial fish and seafood could collapse by 2048″- United Nations. Part 3. **Mass catch techniques are how the cheap ‘Fish of the Day’ or ‘Today’s Special’ gets caught.**
What price cheap fish? What cost to the planet? This photo (via NASA) shows trawlers in the Gulf of Mexico. You can see the plumes created by these bulldozers-of-the-sea from SPACE.
The only way we can prevent this from happening is if the consumer drives the change required for the unsustainable, unethical and mass-catch operators of the seafood industry to change their methods to ethical and sustainable practices. The government won’t do it. The Fishing Management authorities won’t do it. The seafood industry won’t do it. I have endeavoured over many years to drive the change required by petitioning these players in the industry. To no avail.
The caged egg debate proves that real change can be driven by the consumer and I would love to see the same level of scrutiny applied to seafood. Maybe we can stop the collapse of fisheries. It would be a tragedy if we didn’t.

How to convey to the consumer the real price of cheap fish Part 2

How to convey to the consumer the real price of cheap fish Part 1.

Superbugs. Why reducing antibiotic use in Aquaculture (and other animal husbandry) is crucial. Your life may depend on it.

“Will the rise of superbugs return us to a world without antibiotics?”
An important read…This is why it’s so crucial that the aquaculture industry reduces the densities of farmed fish- which necessitates the use of antibiotics to counter the resultant disease which ultimately impacts on the effectiveness of the very thing (antibiotics) which may save our lives. “Will the rise of superbugs return us to a world without antibiotics?” — #repost BBC Focus Magazine (by: Dan Swain, Berkshire)
Antibiotic-resistant bacteria, or ‘superbugs’, are certainly a serious problem. It takes 15 years for a new antibiotic to be developed and tested, but just 10 years of widespread use before bacteria resistant to that drug become common. No new classes of antibiotics have been found since 1984, and drug companies are less interested in looking for new ones because treatments for cancer and heart disease are more lucrative. But things will never get as bad as they were before the world had antibiotics. Better hygiene and sanitation has vastly reduced the incidence of infectious diseases and helped to contain the spread of antibiotic-resistant strains. In Europe, 400,000 people a year are infected with superbugs, but only 25,000 (6 per cent) of these cases are fatal. This many deaths still sounds like a lot, but it’s tiny compared to the number that died before we had antibiotics, when half of all deaths were caused by pneumonia, flu, tuberculosis, gastrointestinal infection and diphtheria.

The superbug problem is serious and getting worse, but antibiotics still save a huge number of lives. In the future, we may need to move away from antibiotics altogether and use bacteria-killing viruses known as ‘phages’ to target the superbugs.”

NB. Important to note also that resistance to the antibiotic-of-last-resort ‘Colistin’ is quietly spreading
